Pumpkin Pie Snacks | Gluten Free & Vegan Pumpkin Pie Bites | Delicious Pumpkin Pie Drops
I honestly don’t even know how I created these a few years ago when I started my baking company, yet I’m sure as hell glad I did! Most of my regular market goers LOVED this! Everyone always found them intriguing. And the size I used to make them, they had like 11-13 grams of protein in them! They had an amazing and unique consistency, all good and anti-inflammatory ingredients, and could easily be made vegan if you’d like. These pumpkin pie protein drops are naturally gluten free, too! They’ve got fiber and healthy fats, including cinnamon that’s got a ton of benefits for ya. I used to describe them as “pumpkin pie in hand held form – yet good for you”! So of course people were all “yes please”!
I think they’re of course divine with the little icing that goes on top of them, as they themselves aren’t very sweet, yet I get if you want to skip it. It does make these refined-sugar free snacks or perfect breakfast item have a bit of processed sugar (using regular old organic powdered sugar), yet you could also use a keto alternative if that’s your thing?! The icing gives them the beautiful curb appeal too, don’t forget!
Using a hand mixer for these is a must, as the batter is sticky! It’s also ideal to use a cookie scoop when transferring these to the pan prior to baking, for the same reason. Easy one-bowl situation again, and you even get to play with whatever type of protein powder you’d like to add in.
I always used the Vanilla Isagenix, which is a full meal replacement shake, yet you’re welcome to use whichever protein powder you enjoy – as long as it’s vanilla or some similar type! I’d think the Salted Caramel Bone Both Protein from Ancient Nutrition would be pretty bomb, yet that’s just me! Vanilla Shakeology not bad, either! You can of course intensify the pumpkin spice seasonings to your liking too, particularly if you’re an extra basic bitch! HA! Like things a little bit on the wild side, throw in 1/4 – 1/2 tsp of ginger?!

Pumpkin Pie Protein Drops
Ingredients
- 1 Cup Pumpkin *Not pumpkin pie filling.
- 1 Cup Almond Butter *Almonds & salt only!
- 6 Tbsp Pure Maple Syrup *PURE maple syrup only!
- 4 Scoops Vanilla Protein Powder (1 cup) *I loved Isagenix.
- 1 Tsp Himalayan Sea Salt
- 1 Tsp Cinnamon
- 3/4 Tsp Allspice + Nutmeg + Cloves *Or pumpkin pie spice.
While it’s easy to just straight gobble these up, they are kind of caloric, so you’ll want to control yourself! Throwing them in the fridge in an air-tight container works just fine. Do be warned though, the icing drizzle may just melt into the drop and take on a shiny effect. The taste will still be lovely, yet the look might have transformed. If you end up making them to take somewhere as a gift to share, just leave them on a platter and take them uncovered, or with some type of lid with holes! You can also just add the glaze when you get where you’re going…wink wink!

Speaking of, you have my full permission to make this whenever you want to, not just around the holidays. Gobble it up year round. And don’t forget that if you’re not quite feeling the taste, play around with which protein powder you’re using. That will of course make a large difference, as well as the amount of each “pumpkin pie spice” seasoning you add. I wouldn’t forget the glaze though. Wink wink!
