In looking at ingredients you can use to make easy and good breakfast ideas when on the AIP diet, it’s a little rough. Everything is savory, as it’s mostly the skillets or hash type creations you can make. I wanted something a little sweeter, or more like something reminiscent of oatmeal or a warm cereal, even a porridge. So I did it!
This recipe is simple as hell, yet does require a few steps. You gotta chop up an apple, heat the cauliflower rice, and then reheat the entire concoction at the end. Worth it, and easier than making a full on skillet or hash, yet still!
I love that this recipe gives natural sweetness, has loads of oh so healthy cinnamon, gets in a serving of veggies, and you can add protein or collagen as you see fit! Sounds like a winner, right?!
Apple Cinnamon Breakfast Porridge
Equipment
- Ninja, VitaMix, NutriBullet, High Speed Blender
Ingredients
- 1 Cup Organic Riced Cauliflower (Frozen)
- 1 Cup Organic Chopped Apple *I use Gala Apples
- 1/4 Cup Organic Coconut Milk
- 1/2 Tsp Organic Cinnamon
- 1/4 Tsp Himalayan Sea Salt
- 1 Scoop Collagen Peptides *Optional
- 1 Tbsp MCT Oil *Optional
Instructions
- Heat Cauliflower Rice in a microwaveable bowl for 90 seconds. *You can also use the stove top as I'm not in love with microwaves, yet I get sometimes we need quick breakfasts!1 Cup Organic Riced Cauliflower (Frozen)
- Chop Apple – Reserve some cubes for the topping!1 Cup Organic Chopped Apple
- Add Coconut Milk to your NutriBullet, Ninja or VitaMix personal sized container. Add in your warm Cauliflower Rice, Apple, Cinnamon, Seal Salt and any other optional mix-ins: Collagen Peptides, MCT Oil, Protein Powder, etc. Blend until the apples are fully broken down!1 Cup Organic Riced Cauliflower (Frozen), 1 Cup Organic Chopped Apple, 1/4 Cup Organic Coconut Milk, 1/2 Tsp Organic Cinnamon, 1/4 Tsp Himalayan Sea Salt, 1 Scoop Collagen Peptides, 1 Tbsp MCT Oil
- Pour back into bowl and then reheat in microwave, or reheat stovetop and ENJOY!
See how easy that was?! Told ya! Another idea is to swap out the apple for a pear flavored breakfast cereal. I think peaches and cinnamon go well, yet you could also do some nutmeg or ginger?! If you’re not on an actual AIP diet, you can also add in some raw nuts or seeds as a topping: pecans, walnuts, pumpkin seeds, or hemp seeds.

I guess I should also mention that this is a great idea for anyone on a gluten free diet or grain free diet. Sweeter breakfasts are hard to come by on restrictive diets, so definitely cherish this recipe!
